I was tired of fixing the same old thing every other night, so I told Kody we would have new things for 2-3 months. I have gotten recipes off the internet, word-of-mouth, old cookbooks, new cookbooks, and I am loving it. It's a new hobby for me.
This recipe came from http://www.campbells.com/ and was wonderful!
Beef Taco Bake)
1 lb. ground beef
1 can Condensed Tomato Soup
1 cup chunky salsa or picante sauce
1/2 cup milk
6 flour tortillas (8-inch) OR 8 corn tortillas (6-inch), cut into 1-inch pieces
1 cup shredded Cheddar cheese (about 4 ounces) (I always use the Fiesta Blend--Great Value brand)
1.Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.
2.Stir the soup, salsa, milk, tortillas and half the cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Cover the baking dish.
3.Bake at 400°F. for 30 minutes or until the beef mixture is hot and bubbling. Sprinkle with the remaining cheese. May look gross, but um, hello heaven. I loved it and Kody devoured it. My mom was out of town for a meeting and we took my Dad some, he raved about it as well. It would be great paired with guacamole dip and tortilla chips...and maybe a margarita!
